Chef Stephen Putnam and owner Hal Zwick of Sag Harbor’s Paradise Café invited me to a feast at the James Beard Foundation’s First Friday Luncheon series. Putnam told The Sheet, “I have a sweet tooth and I guess it comes out in the food!” That was easy to see … and taste, as guests salivated over cinnamon smoked quail with quail sausage, pan-roasted striped bass with roasted Brussel sprouts, chanterelle mushrooms with corn cakes in a butternut squash nage, and apple tart with maple ice cream and apple jack caramel. 126 Main St. • 631.725.6080
